Why I love it:
I like cauliflower, and I love cream of cauliflower soup. This recipe is simple, easy and fantastic. It is not going to qualify as light and healthy, but the butter and cream are worth it. I loaded my soup up with extra pepper and hubby added cheese. This is a great soup to warm the soul on a really cold day in the deep of winter.
